Adrian Callinan grew up in the quiet countryside of Co. Clare. From an early age, he realised that a career with food was his future. Growing up in a farming community he acquired an appreciation and understanding for good-quality food ingredients. He became a chef at sixteen, beginning his career in Ennis and later working in Limerick City.
Quickly realising that foreign experience was a must, Adrian travelled to Germany where he spent time in a number of exclusive family-run hotels and restaurants in the Black Forest, working closely with local colleagues to gain an understanding of modern Central European kitchens. After this he travelled to Italy for a further six months to expand his understanding of contemporary Italian cuisine.
Upon returning to Ireland, Adrian undertook to continue working in high quality, family-run houses where he could pursue his interest in innovative food. In these establishments always using high quality, fresh Irish local ingredients in a respectful manner to create contemporary dishes and reviving the modern classics.
In 2010, Adrian undertook a programme of further education which resulted in a Bachelors and Masters Degree, awarded by GMIT and DIT respectively. He now consults to the catering industry and teaches part-time at LIT.
